The various types

There are different kinds of beef which bear the seal of quality. They include veal from young calves as well as beef from adult cattle.
You can buy high-quality South Tyrolean meat from the following animals:
  • Milk veal: less than 8 months old
  • Young steer: 8 to 12 months old 
  • Bullock: up to 36 months old
  • Heifer: up to 36 months old
  • Young cow: up to 36 months old
Tip: preserving the freshness of meat
Meat should be placed in the fridge immediately after purchase. It can be kept at 0-2°C for a couple of days.
