Types of South Tyrolean honey

The bees find an abundance of different flowers in the fields and meadows of South Tyrol/Südtirol. They bring the nectar from these back to the hive. This is how blossom honey is made. The honeydew collected by the bees from the leaves of trees is also the basis of a kind of honey; the bees use it to make forest honey. There are four different types of honey commonly produced in South Tyrol: multi-flower honey, Alpine rose honey, dandelion honey and forest honey (honeydew). With such a variety of honeys, it’s great fun to compare the different colors and aromas. Which one is your favorite? Multi-flower honey
Alpine rose honey
- Multi-flower honey is made of nectar from various blossoms.
- Unlike other honeys, no single type of flower predominates.
- Blossom honey is very aromatic.
- Crystallizes very quickly (10-20 days).
- One specialty: cream honey, a blossom honey which is gently whipped soon after extraction, giving it a creamy consistency.
- Most of the nectar comes from the Alpine rose (a type of rhododendron)
- Typical and unique to the Alps
- This honey is made at higher altitudes.
- The harsh weather conditions in the mountains mean it is difficult to make and therefore a rarity.
- This type of honey is light to golden yellow.
- Mild, fruity taste.
Forest honey (honeydew)
- Mainly produced in May
- Light color
- This type of honey has a powerful aroma.
- Spicy, tart taste
- Fine crystalline structure
- Aphids and scale insects leave a sugary substance on the leaves of the trees; this is called honeydew.
- The bees collect this and make it into forest honey.
- Dark color.
- Forest honey (honeydew) has a strong taste.
- Crystallizes very slowly (in 6 months)
