The various types

There are different kinds of beef which bear the seal of quality. They include veal from young calves as well as beef from adult cattle.
You can buy high-quality South Tyrolean meat from the following animals:
  • Milk veal: less than 8 months old
  • Young steer: 8 to 12 months old 
  • Bullock: up to 36 months old
  • Heifer: up to 36 months old
  • Young cow: up to 36 months old
Tip: adding salt to meat
Do not add salt until just before or during preparation. Salt draws the juice out of the meat. Meat salted too early is prone to dry out.
