What’s so fascinating about working as a restaurateur? Giving our guests a taste of our district.
What dish do you most often recommend to your guests? Val d’Isarco wine soup, Tyrolean “Gröstel” (potato and beef casserole), game dishes, “Schlutzer” (pasta pockets) and dumplings.
What’s your own favorite dish? Anything with dumplings.
What South Tyrolean specialty is the most popular ingredient in your restaurant kitchen? Potatoes.
Owned by the Fink family since 1896, our restaurant is located at the heart of Brixen under the Kleine Lauben. Our cuisine is strongly influenced by traditional South Tyrolean dishes and our local history. Our house is also closely tied to our history, not least due to Hans Fink, well known as a folklorist and author. In our kitchen, our goal is to produce as much as possible ourselves and to adapt our menus to the season.
